The InterContinental Rialto is so much than just a five start luxury stay smack bang in the middle of Melbourne. The property is situated in one of the most historic buildings in Australia. Built in 1891, it was completed during the Gold Rush when Melbourne was the richest city in the world, it was transformed into a hotel in 2008.
The InterContinental’s premiere dining option on site is Alluvial. The restaurant offers a beautiful breakfast, express lunch for people in a rush, a pre-threatre menu for guests taking in a show and then a full blown dinner menu where you can opt for paired wines with you meal. Want more? Withing the Rialto complets lies celebrity chef Guy Grossi’s famous Merchant Restaurant and Shannon Bennett’s Vue de Monde. The Bluestone Bar and Market Lane serve a wide selection of drinks and provide a great atmosphere for social and business meetings.
Sydney, Flinders Island, Hobart: Our first foray aboard Captain’s Choice privately chartered, business class plane showcases one of the many benefits of private air travel the ability to create your own route. On the way from Sydney to Hobart, you detour to Flinders Island for the day to explore the wild and rugged landscapes, and enjoy lunch at Mountain Seas Lodge. In Hobart, the impressive MACq 01 hotel is your base for the next three nights. You will be welcomed with drinks and canapes prior to dinner in the hotel s Old Wharf Restaurant.
Hobart: The small city of Hobart is full of treasures, with historic Salamanca Place at its centre. This morning you might choose to wander the famous outdoor market. Or, learn about the explorers, entrepreneurs, villains and heroes of this convict-built city during a walking tour through the precinct. MONA s creator designed his ultra-modern art museum to be approached by water, and the Posh Pit experience on the dedicated ferry is the only way to go. After free-flowing drinks and canapes, you step ashore for lunch at the museum s acclaimed restaurant, The Source, before descending into the underground art bunker.
Hobart: You might choose to explore Hobart independently today, or join an adventure to nearby Bruny Island, where you can select one of two experiences. Choose the gourmet tour to sip and savour the islands renowned produce straight from the source. There’s oozing cheese’, freshly shucked oysters, fudge and golden honey, washed down with wine and whiskey. Then, a short stroll to balance things out. Alternatively, cruise alongside some of Australia’s highest sea cliffs and beneath towering crags while looking for seals, whales, dolphins and birds.
King Island: Your private plane is waiting. After take off, watch the lush green of Tasmania disappear from view. It won’t be long before you make your descent to King Island. You then check in to your clifftop retreat, Boomerang by the Sea, then set forth on our hunt for the island s famous cheese and beef. After tasting the delights of King Island, head north to the southern hemisphere s tallest lighthouse at Cape Wickham, followed by a picnic of local produce overlooking the ripples of Penn s Lagoon.
Kangaroo Island: From one splendid island to the next. Its back aboard your private plane for the short flight to Kangaroo Island. While the west coast of the island was devastated by the bushfires of January 2020, the east remains untouched our visit will help a local community and a tourism industry much in need of support. You head straight to Dudley Winery for a tasting and a cheeseboard for lunch, followed by a walk around Cape Willoughby Lighthouse. Then it s back to Mercure Kangaroo Island Lodge for a relaxed evening.
Kangaroo Island: You spend the morning exploring the natural charms located within Flinders Chase National Park, including the Remarkable Rocks and Admirals Arch. Continue to Seal Bay, where visitors are able to get close to a wild colony of around 1,000 rare Australian sea lions, then meet members of the South Australian Country Fire Service to hear about the impact of the bushfires that ripped through 45 per cent of the island. You reconvene at your hotels restaurant tonight for your last dinner as a group.
There’s time for one more stop before your journey’s end. Your private plane lands in Mildura and you travel to Trentham Estate winery aboard a charming paddle steamer.
